Cappucino de maïs

6épis de maïs HUGO REITZEL

1boîte de maïs doux (340 g)

2.5dl de lait

1dl de bouillon de volaille

1pincée de muscade

Sel, poivre du moulin

Poivre de Cayenne

Comment préparer

Egouttez le maïs en boîte et rincez-le à l’eau tiède.

Placez les grains dans une casserole avec 2 dl de lait (conservez 0.5 dl pour la suite de la recette).

Ajoutez le bouillon de volaille, assaisonnez avec la muscade, une pincée de Cayenne, un tour de moulin à poivre et sel.

Cuire à frémissement pendant 10 minutes, mixez le tout et passez la préparation à travers un chinois, afin d’obtenir une crème lisse.

En prélever 1/2 dl et ajouter le lait restant, coupez les épis de maïs en fins biseaux.

Au moment de servir émulsionnez le mélange au mixeur de manière à obtenir de la mousse.

Placez la crème dans les bols, déposez la mousse et décorez avec les biseaux de maïs.
